Comece cozinhando o feijão de sua preferência até ficar al dente (usei o carioca mesmo)

Depois de cozido, numa panela, coloque um pouco de gordura e frite o Bacon e a calabresa (eu não retiro a gordura depois, essa gordura faz toda diferença na farofa, ela que deixa a farofa molhadinha e saborosa), não deixo o Bacon e calabresa fritar muito para não perder a suculência

Adicione o alho socado, cebola, pimentão,pimenta de cheiro e tomate picados, deixe refogar. Acrescente sal a gosto, o feijão, o cheiro verde e deixe refogar mais um pouco.

Vai colocando a farinha de mandioca à seu gosto.  Se gosta do feijão tropeiro mais molhadinho, coloque menos farinha, se gosta mais seco, coloca mais farinha. Desligue o fogo

Adicione a couve picadinha (com o fogo desligado), tampe a panela. A couve vai chegar no ponto ideal somente com o calor da panela.. ela trará crocância para o prato
