  • Diced very ripe tomato15 kg
  • Diced medium onion1 unit(s)
  • Garlic clove cut into quarters 41 unit(s)
  • Pinch of sugar1 unit(s)
  • Salt to taste1 to taste
  • Spices also to taste1 unit(s)
  1. Wash the tomatoes well, cut into 8 parts and place in the pressure cooker (with seed and skin). Also put the onion, garlic, salt and sugar. Close the pressure cooker and cook for 15 minutes (after the cooker whistle). When the pressure time is up, open the pan and pour all the contents into the blender.
  2. Beat everything until you get a pasty cream. Sift all the liquid well and pour it into the pan again to be able to clear the water and thicken the sauce. I usually do this on medium heat for 15 minutes. Let it cool, put it in pots in the amount that is normally used in a portion (for 250 g of pasta I use 200 ml of sauce) and take it to the freezer.
  3. This amount yields me about 6 pots of 200 g.
