- Preparation mode Arrange the tomatoes, onion and garlic on a platter. Drizzle with oil and balsamic vinegar. Sprinkle with salt and pepper. Add the rosemary sprig and dried herbs. Bake at 150°C in the preheated oven. Let it cook slowly, which can take about 2 hours. Once baked, the confit can be served immediately or stored in a glass jar, in the fridge or freezer.
