Wash the Shitakes. Then cut the stems and remove some of the mushroom pulp.
On medium heat, place the pepperoni sausage chopped into small cubes in a pan and the small cubes chopped into slices. Brown for 2 minutes and then add the diced onion and crushed garlic to brown a little.
Place the Shitakes in a mold and then place the stuffing and then place the grated cheese and a drizzle of olive oil on top. Take to bake for 20 minutes. Before serving, add the Cheiro verde.
