  • Arborio rice | 2 cup
  • Onion | 1/2 unit(s)
  • Homemade broth | 1 l
  • Strawberry puree | 2 cup
  • Freshly grated Parmesan cheese | 1 cup
  • Salt |  to taste
  • black pepper |  to taste
  • White or red wine | 1/3 cup


  1. Heat a pan over medium heat. Add the butter and add the onion, season with a pinch of salt and sauté until wilted.
  2. Add the rice and mix well for 1 minute to coat all the grains.
  3. Season with salt and pepper - remember that homemade broth does not contain salt
  4. Add the wine and stir until dry. From the entrance of the wine, turn on a timer of 17 min.
  5. Water with 2 ladles of the broth and keep stirring so it doesn't stick to the bottom.
  6. As soon as it starts to dry, repeat the addition of broth.
  7. Keep watering and stirring until 5 minutes left to finish.
  8. When there are 5 minutes left, add the Parmesan cheese and strawberry puree until the risotto is creamy.
  9. When the time is up, serve immediately.
