- Olive200 g
- Palm300 g
- Raisins to taste
- Mayonnaise500 g
- Straw Potato120 g
- Seasonings and Spices to taste
- Put a tablespoon) of oil in the pressure cooker, add the seasonings of your choice (crushed garlic, onion, salt etc) and after browning put the lizard divided into 3 pieces, add 3 glasses of water and put pressure. Cook until the water dries up and is very soft, to the point of unraveling. After cooking, let it cool and shred (see photos). Reserve.
- Peel the carrot, cut into cubes and cook (only in water or steam) for a little while (al dente). Cut the green corn and sauté with the seasonings of your choice, stirring, if you need to add a few drops of water to cook. Book them.
- In a large bowl, cut the olives and hearts of palm as you prefer. Add raisins, grated onion (optional). Put the shredded meat (lizard), carrot, corn and mix. Add the mayonnaise and mix well. You can add other seasonings if you want, be careful with salt!
- Place on a platter and cover (pass the plastic film) and take the fridge. When serving, put straw potatoes on top. Best sausage, wonderful!!!
