Sausage risotto with leek

- Arborio rice2 cup
- Leek2 cup
- Sausage500 g
- grated cheese1 cup
- White wine250 ml
- Boiling water2 l
- Lemon zest1 unit(s)
- Salt and pepper to taste
- Red onion1/2 unit(s)
- “Fry” the sausage cut into pieces in the pan that will make the risotto. Reserve.
- Saute half of the leek with a drizzle of olive oil. Scrape the bottom of the pan for the sausage burn to loosen.
- Add arborio rice and saute.
- Add the wine and stir until reduced a little.
- Add the boiling water little by little, stirring constantly.
- Just before the risotto is done, add the sausage and the rest of the leek.
- When the rice is ready, turn off the heat and add the lemon zest, mixing them together.
- Add the grated cheese and mix well.
- Serve with the red onion on top.
