Cut the tomatoes in half and remove the green part, placing in a large pot
Cut the red pepper into strips and mix with the tomato.
Bring to a boil, reduce to medium heat and cover the pan.
Cook for 30 minutes, stirring every 5 minutes.
After this time, mix well.
Drain all the water from the pan
Place the tomatoes in the food processor and blend well for at least 3 minutes with the coarse salt.
Passata is ready to be used
If you are not going to use it right away, take a very strong glass bottle, put two sprigs of basil, fill it with the passata, another 20 ml of olive oil and boil it for 20 minutes immersed in water. This will keep the passata for at least a week.
