- Peel the potatoes and then grate on a thin blade.
- Transfer to a sieve and squeeze by hand to remove excess water.
- Return to the bowl and season as desired (salt, pepper, paprika, oregano).
- Heat the frying pan with a thread of oil and with low heat, distribute the potatoes pressing well. Add a little more oil to the sides so it doesn't stick.
- Cook for 8 minutes on each side - turning with the help of a plate and adding more oil to the skillet.
