- Salt to taste
- Place the milk in a large saucepan and heat until it starts to boil.
- Turn off the heat and add a pinch of salt and lemon juice, stirring constantly until the whey is separated from the milk fat.
- Pour into a colander or a very clean cloth and let it rest for about 15 minutes.
- Press the strainer or cloth well to remove all the liquid and store in a container with a lid, seasoning according to your preference.
