  • Aguhinha or parboiled rice1.1/2 cup
  • Butter3 tablespoon
  • Chopped Onion1 unit(s)
  • crushed garlic2 unit(s)
  • Dry white wine100 ml
  • Vegetable broth2 cup
  • Sour cream200 ml
  • Mozzarella100 g
  • Grated Parmesan100 g
  • Sliced Champignon100 g
  • Salt and pepper to taste
  1. Heat the vegetable broth.
  2. In a pan, heat 2 tablespoons of butter and lightly brown the onion and garlic.
  3. Add the rice and stir well.
  4. Add the wine, mix well and let it evaporate.
  5. Add the vegetable stock or water until the rice is covered.
  6. Let it cook for approximately 10 minutes.
  7. When the rice is “al dente”, add 1 tablespoon of butter, stir well.
  8. Add the cream, cheese and mushrooms. Adjust the salt and mix well. Serve it hot.
