- Aguhinha or parboiled rice1.1/2 cup
- Butter3 tablespoon
- Chopped Onion1 unit(s)
- crushed garlic2 unit(s)
- Dry white wine100 ml
- Vegetable broth2 cup
- Sour cream200 ml
- Mozzarella100 g
- Grated Parmesan100 g
- Sliced Champignon100 g
- Salt and pepper to taste
- Heat the vegetable broth.
- In a pan, heat 2 tablespoons of butter and lightly brown the onion and garlic.
- Add the rice and stir well.
- Add the wine, mix well and let it evaporate.
- Add the vegetable stock or water until the rice is covered.
- Let it cook for approximately 10 minutes.
- When the rice is “al dente”, add 1 tablespoon of butter, stir well.
- Add the cream, cheese and mushrooms. Adjust the salt and mix well. Serve it hot.
