  • Tomato paste1 can(s)
  • Boiling water500 ml
  • Chopped onion1 unit(s)
  • Chopped carrot1 unit(s)
  • Chopped celery stalk1 unit(s)
  • Sugar1 dessert spoon
  • Salt to taste
  • Black pepper to taste
  • Dry red wine1 cup
  • Basil to taste
  • Olive Oil3 tablespoon
  1. In a pan, heat the olive oil and, over medium heat, fry the onion, carrot and celery for 10 minutes (Italian sauté called "sofritto").
  2. Add the red wine, stir well and let it evaporate.
  3. Add the tomato paste with sugar and let it cook while stirring for another 5 minutes.
  4. Add boiling water little by little, stirring constantly. Lower the heat and cook with the pan covered for 20 minutes, stirring occasionally.
  5. Take basil leaves, break them with your hands and add them to the sauce. Mix.
  6. Adjust the salt and pepper.
  7. If you wish, you can pass the sauce through the mixer and make it uniform and creamy.
  8. Serves as a sauce for pasta, parmigiana, lasagna and other dishes.
  9. You can increase it with ground meat, sliced ​​pepperoni, pieces of chicken breast, sausage. It's very versatile.
