- Vinegar to taste
- Sanitize and boil the glass jar and lid before starting the recipe.
- Remove the leaves/stems from the peppers and make thick slices. I used green, yellow, red and ripening peppers for a prettier look.
- Bring enough water to a boil in a pan to cover the pepper slices. When it comes to a boil, add the peppers and leave for 3 minutes.
- In the clean and dry glass jar add the salt, herbs (I used mint, fresh oregano and rosemary) and salt. Reserve.
- Drain the peppers and place in the pot, filling with vinegar to cover everything. Gently shake just to mix in the salt. Let it rest overnight. Cooking the peppers makes it possible to consume them quickly. Keep in refrigerator. Use as an accompaniment to legume stews, grilled vegetables, farofa, dumplings and whatever else you want.
