  • Boiled and mashed potatoes | 6 unit(s)
  • Milk | 1 teaspoon
  • Butter or margarine | 2 tablespoon
  • Grated Parmesan Cheese | 1 tablespoon
  • Eggs | 3 unit(s)
  • Wheat flour, enough to insist. | 2 tablespoon
  • Mozzarella slices for the filling |  to taste


  1. Whip the egg whites
  2. Add the yolks and mix the other ingredients, adding the flour little by little.
  3. Arrange the dough on a greased tray and bake in a hot oven for 25 minutes, until cut.
  4. Turn the pan over a damp dish towel, cover the dough with slices of mozzarella and roll the roulade.
  5. Spread the tomato sauce on top, then sprinkle with the grated Parmesan cheese.
  6. Return to the oven for a few minutes, until the mozzarella has melted.
  7. Serve hot.
