- Boiling water4 cup
- Chopped Onion1/2 unit(s)
- Salt1 teaspoon
- Carrot, chopped into small cubes1 unit(s)
- Frozen peas1/2 cup
- Shredded cooked chicken1 cup
- Corn1/2 cup
- Parsley to taste
- Chopped Tomato1 unit(s)
- Tomato sauce3 tablespoon
- Grated mozzarella cheese (can be sliced)1 cup
- In a medium pan, start by sautéing the onion in olive oil, as soon as it wilts a little add the garlic, as soon as it starts to brown add the rice and let it sauté well. Add the tomato, chicken and tomato sauce in sequence. Refo some more and add the salt, carrots, corn and peas, mix everything and add the water. Let it cook with the lid between open until the water dries up, turn off the heat, cover and leave for another 3 minutes.
- Uncover the rice, add the parsley and mix to become loose. In a refractory greased with olive oil, put half the rice spread half the cheese, add the rest of the rice and sprinkle the rest of the cheese, if you want a more gratin gold you can finish with grated parmesan. Bake in the oven until the cheese melts, about 15 minutes. Just serve with a very tasty salad!
