  1. Clean the stomach and guts well, remove all the fat and cut into small pieces. I like to open the gut and remove the fat that remains inside.

  4. Put it in a pressure cooker, add all the seasonings, take it to the fire to sauté, after being well sautéed, put water and leave it under pressure until everything is very soft.
  5. Note: It takes time to cook and to be good you can only remove it from the heat when it is really soft, don't leave any broth, I particularly like it to be well refined.
