Recipe
- Cut the eggplant into thin slices
- Assemble the mini pizzas with the cheese slices and tomato slices
- Sprinkle with oregano and drizzle the mini pizzas with extra virgin olive oil
- Bake in a medium oven for approximately 20 minutes or until the eggplant is cooked.
