Homemade Tomato Sauce

Cut the tomatoes, with skin and seeds, roughly into cubes. Do the same with the onion (don't make it too big so it doesn't get raw).
Garlic cloves should only be peeled.
Put everything on a baking sheet along with the spices and mix well.
Bake in the oven (250°) for 20 minutes.
Remove and hit everything in the blender, including the water that forms in the roast.
If necessary, purée in the pan until it reaches the desired consistency (I usually don't purée, as it is already dense and delicious after hitting the blender).
You can use it right away or freeze it.
Add fresh herbs just before serving.
The more ripe your tomatoes are, the tastier the sauce will be.
