- Whole milk1 l
- White wine vinegar3 tablespoon
- Butter1 tablespoon
- Salt to taste
- Put the milk in a pan until it boils.
- As soon as it boils, add the vinegar and stir with a fouet until it comes to a boil.
- Strain and discard the liquid
- Beat the dough while still hot in the blender with the butter and salt.
- Refrigerate for 30 minutes
