- Cassava, peeled in cubes1 kg
- Minced Garlic Cloves5 unit(s)
- Chopped coriander bunch1 unit(s)
- Lemon juice2 tablespoon
- Olive oil2 tablespoon
- Smoked paprika1/2 tablespoon
- Cayenne Pepper1/4 teaspoon
- Salt to taste
- Oil for frying to taste
- Start by cooking the cassava in a pan with water until it is soft but not falling apart. Drain the water and reserve.
- In a deep pan, heat the oil and fry the cassava by immersion until golden. Reserve.
- In a large skillet, heat the oil, add the garlic and when it is golden, quickly add the paprika, cayenne pepper and lemon juice. Stir quickly and add the fried cassava, mixing well so that it gets all the seasonings from the pan.
- Turn off the heat, adjust the salt and finish with cilantro.
