  • Zucchini in thick slices800 g
  • Coriander2 unit(s)
  • Parsley1 unit(s)
  • Minced Garlic Cloves4 unit(s)
  • Lemon juice1/3 cup
  • Olive oil1/2 cup
  • Sweet paprika1 tablespoon
  • kummel seed2 teaspoon
  • Cayenne Pepper1/2 teaspoon
  • Salt to taste
  • Olive oil for grilling to taste
  1. With the exception of the zucchini, blend all the ingredients in the blender until you get a homogeneous sauce.
  2. Place the cut zucchinis in a large bowl, add the sauce and mix well to coat all the zucchini. Seal with plastic wrap and let rest for at least 20 minutes in the fridge.
  3. In a frying pan (preferably with grill and non-stick marks) add a drizzle of olive oil and when it is very hot add the zucchinis little by little. Avoid turning them over so they are well marked.
