  • Small garlic head1 unit(s)
  • Coarse salt to taste
  • Extra virgin olive oil to taste
  • Black pepper to taste
  • Chives to taste
  • Grated Parmesan50 g
  1. Wrap the potatoes in aluminum foil with coarse salt, a pinch of served and a drizzle of olive oil.
  2. Roll the onion in aluminum without seasoning. It will preserve the sweetness of the onion.
  3. Cut the end of the handle of the whole head of garlic and, still in the peel, salt and put the oil.
  4. On a hot grill, roast the ingredients for about 1 hour or until the potatoes are soft. Keep the fire burning, without flames.
  5. Let cool for about 30 minutes. Open the packages, the onion is just peeled and chopped. The potatoes scrape if it has burned a pit and the garlic can be squeezed. All on one platter. Crush and mix with black pepper.
  6. Cover with parmesan and brown in the oven or on the grill if you have an iron pan. When serving sprinkle the chopped chives.
