  • Italian Tomatoes4 unit(s)
  • Onion1 unit(s)
  • Garlic2 unit(s)
  • Chives to taste
  • Olive oil to taste
  • Salt and pepper to taste
  1. Chop the onion, garlic and tomato in brunoise
  2. In a heated pan with a drizzle of oil, add the onions, then add the garlic, then the tomatoes.
  3. Season with salt and pepper, cover the pan and let it simmer until the tomatoes break down.
  4. When the tomatoes have a sauce texture, add the eggs carefully so that the yolks do not burst, cover the pan and turn off the heat, season the eggs with salt and serve immediately.
