  • Dark Mustard1 dessert spoon
  • Garlic2 unit(s)
  • Salt and pepper to taste
  1. Wash the eggplant and cut the ends.
  2. Place on a plate, and microwave for 6 to 8 minutes, depending on the power of your microwave.
  3. Then, cut it lengthwise, and remove the pulp, with the help of a spoon.
  4. Put the cooked eggplant pulp with the other ingredients of the recipe in the processor, and beat until it becomes a homogeneous mixture.
  5. You can use the blender too! Drizzle with more oil and serve chilled.
