  • Cumin Grains1/2 teaspoon
  • Coriander seeds1/2 teaspoon
  • Carrot6 unit(s)
  • Olive oil2 tablespoon
  • molasses1 tablespoon
  • Salt1/4 teaspoon
  • Black pepper to taste
  • Thyme to taste
  • Fresh herbs to taste
  1. In a skillet, toast the cumin and coriander seeds. It's pretty quick, when you start to feel a stronger aroma from the spices, take it off the heat.
  2. Transfer the spices to a mortar and pestle and lightly crush, leaving larger pieces. Reserve.
  3. Peel the carrots and cut into sticks.
  4. In a bowl, add the oil, molasses, spices, salt, pepper and thyme. Mix well.
  5. Add the carrot sticks to the bowl and mix well, so that they are all covered by the seasoning mix.
  6. Transfer to a baking sheet and bake in a preheated oven at 180°C for 30 minutes or until the carrots are cooked through and lightly caramelized.
  7. Serve with chopped fresh herbs.
