- Cumin Grains1/2 teaspoon
- Coriander seeds1/2 teaspoon
- Carrot6 unit(s)
- Olive oil2 tablespoon
- molasses1 tablespoon
- Salt1/4 teaspoon
- Black pepper to taste
- Thyme to taste
- Fresh herbs to taste
- In a skillet, toast the cumin and coriander seeds. It's pretty quick, when you start to feel a stronger aroma from the spices, take it off the heat.
- Transfer the spices to a mortar and pestle and lightly crush, leaving larger pieces. Reserve.
- Peel the carrots and cut into sticks.
- In a bowl, add the oil, molasses, spices, salt, pepper and thyme. Mix well.
- Add the carrot sticks to the bowl and mix well, so that they are all covered by the seasoning mix.
- Transfer to a baking sheet and bake in a preheated oven at 180°C for 30 minutes or until the carrots are cooked through and lightly caramelized.
- Serve with chopped fresh herbs.
