- Butter1 tablespoon
- Wash and peel the carrots.
- Chop into small cubes.
- Place the pan over medium to high heat and add a drizzle of olive oil, salt to taste and black pepper. Mix it up a bit.
- Leave the pan covered for the carrot to caramelize and let some parts “burn”. It will be golden brown.
- Halfway through browning, add 2 cloves of garlic to the pan. Leave covered. This process should take approximately 10min.
- Transfer to a blender, add water little by little and beat.
- Taste to see if the salt is good.
- Return to the pan and finish with the butter.
