- Butter beans150 g
- Cooked yam2 unit(s)
- Turmeric Powder1 coffee spoon
- Olive Oil1/4 cup
- Whole sea salt to taste
- Lemon1 unit(s)
- Black Pepper to taste
- Wash, drain and soak the beans in water for 12 hours
- Drain and cook the beans in water for about 1 hour, or until al dente.
- Drain, cool. Season with salt and pepper.
- Blend the yams with the olive oil, saffron, salt, pepper and lemon juice in a blender.
- Add water little by little until you get a very smooth and creamy mayonnaise consistency.
- Mix mayonnaise and beans. Adjust the weather.
- Garnish with fresh herbs and olive oil. Is ready!
