- In a pan, brown the bacon cut into cubes over medium heat so that the fat melts. Lightly beat the eggs and season with a pinch of salt. Move the bacon to the sides of the pan, leaving the middle free to fry the eggs. Add the cooked rice, sauté for 4 minutes or until the rice is hot. The tip is to add 2 tablespoons of water to loosen the bottom of the pan. Turn off the heat and add the chopped parsley. Mix the potato straw just before serving, so that it gets very crispy.
