- Grated Parmesan Cheese1 cup
- Salt1 to taste
- Black pepper1 to taste
- Oregano1 to taste
- Olive oil4 tablespoon
- Cook the potatoes in salted water until they are "al dente" (not raw or overcooked). Discard the cooking water and place the potatoes in a colander for a few minutes.
- Arrange the potato slices side by side on a baking sheet and season to taste. Drizzle generously with oil. Bake until golden on one side, turn the potatoes, add the grated Parmesan over the slices and return to the oven until the cheese is golden.
