  • 6 large potatoes, washed500 g
  • sliced bacon300 g
  • 2 small onions, sliced100 g
  • grated cheese200 g
  • Butter25 g
  • Sour cream100 g
  • Chopped Parsley to taste
  • Salt, Black Pepper to taste
  1. Pre heat the oven to 200ºC. Pierce the potatoes with a fork, put them in the oven and bake for 45 minutes or until tender.
  2. Remove them from the oven and lower the temperature to 180ºC.
  3. Meanwhile, heat a skillet and fry the bacon slices for 2 or 3 minutes, add the onion and fry for another 1 minute.
  4. Cut the 1/3 of the potato lid horizontally. With a spoon, remove the pulp from the potato and place it in a bowl.
  5. Reserve the hollow potatoes, placing them on a greased baking sheet.
  6. Crush the pulp with a fork. Add the butter, the cream and beat until you get a smooth puree.
  7. Add the grated cheese and bacon with the onion and season to taste.
  8. With a spoon, return the mixture to the potatoes and bake them for 20 to 25 minutes until the surface is golden. Sprinkle with parsley and serve while still hot.
