- Ripe avocado1 unit(s)
- Parsley to taste
- Boiled Eggs3 unit(s)
- In a blender, beat the eggs while still hot with the avocado.
- Gradually add the oil until it reaches the mayonnaise point. Continue beating and pushing the mayonnaise to the center of the blender with the help of a silicone spatula.
- Add the lemon and mix quickly.
- Transfer to a bowl where it will be served, add the salt and a part of the chopped parsley and mix. Finish with the rest of the parsley to decorate.
