- Cream of avocado: cut the avocado in half, remove the pulp, mash well and season with salt, pepper, olive oil and lemon!
- Assembly: take the slices of bread, and toast in a frying pan on both sides. Fry an egg (the way you like with the hard or soft yolk). Place a slice of cheese on top to melt and set aside. Spread the avocado cream on the two slices of bread, place tomato and onion slices, arugula and lettuce, season the salad with salt and pepper and place the egg with cheese on top. Close the bread and cut in half and enjoy!
