  • dry lentils500 g
  • olive oil100 ml
  • Sicilian lemon1 unit(s)
  • cumin1 teaspoon
  • fresh herbs1/2 cup
  • salt1.5 teaspoon
  • black pepper1.5 teaspoon
  • bacon200 g
  • boiling water1 l
  1. cut the bacon into cubes and brown in a pan over medium heat. Remove the bacon and set aside, leaving the fat.
  2. with the fire still on, add a tablespoon of olive oil to the bacon fat and heat the lentil and cumin, mixing very well, season with salt and pepper and mix again.
  3. add boiling water to the lentil until it completely covers the grains and passes 2 cm in height. mix, cover, lower the heat a little and let it cook for 20 min or until the water is completely absorbed by the lentil.
  4. in a bowl mix 100ml of olive oil, the lemon juice and the chopped herbs as you prefer.
  5. Add half of the lentils to the bowl while still hot and mix well. serve in individual portions with the golden bacon cubes on top.
