- bacon200 g
- boiling water1 l
- cut the bacon into cubes and brown in a pan over medium heat. Remove the bacon and set aside, leaving the fat.
- with the fire still on, add a tablespoon of olive oil to the bacon fat and heat the lentil and cumin, mixing very well, season with salt and pepper and mix again.
- add boiling water to the lentil until it completely covers the grains and passes 2 cm in height. mix, cover, lower the heat a little and let it cook for 20 min or until the water is completely absorbed by the lentil.
- in a bowl mix 100ml of olive oil, the lemon juice and the chopped herbs as you prefer.
- Add half of the lentils to the bowl while still hot and mix well. serve in individual portions with the golden bacon cubes on top.
