Tabbouleh of quinoa

Soak the quinoa in water for 30 minutes.
Chop the onion into small cubes, add salt and juice of 1/2 lemon. Press with your hands. Reserve.
Remove the seeds from the tomato and chop into small cubes.
Chop the cucumber into small cubes.
Cook the quinoa with enough salt and water to cover it for 5 minutes. Drain if there is any water left and allow to cool.
Gently mix all the ingredients, season with olive oil, black pepper and juice of 1/2 lemon. Adjust the salt and you're done!
