  1. Start by cutting the xoxo, carrot and potato into cubes.
  2. Prepare a couscous pan, place the cubed vegetables inside, cover and place on the fire to steam for 8 minutes.
  3. Remove the vegetables from the couscous pan and place in a bowl, sprinkle with the chopped coriander, and finish with salt and olive oil.
