- White wine vinegar2 tablespoon
- Extra virgin olive oil200 ml
- Boiling water1 l
- Cold water1 l
- Ice100 g
- Salt to taste
- Black pepper to taste
- Coriander to taste
- Prepare a vinaigrette sauce with tomatoes, onion, vinegar, olive oil, salt, pepper and coriander.
- Cook the seafood in boiling water for 5 minutes.
- Remove the shellfish from the boil and immediately place them in cold water with ice to give them a thermal shock.
- Drain the seafood and mix it with the vinaigrette.
- Let it rest for at least 1 hour.
- Serve with sliced French bread. Very tasty and refreshing.
