- Peel the raw chayote and chop it into squares, then wash the tomato well and chop it into squares too. Chop the onion and pepper and season with salt, black pepper, chimichurri, lemon zest, lemon and olive oil. Stir everything and just serve. It's a delight. Note: Chayote is completely raw, it does not need to be cooked.
