- Quinoa Grains1 cup
- Water2 cup
- Diced chicken breast1/2 unit(s)
- Red onion1/2 cup
- Cucumber diced1/2 cup
- Diced Tomatoes1/2 cup
- Sliced Avocado1/2 cup
- lime to taste
- Salt to taste
- Olive oil to taste
- Girl's Finger Pepper to taste
- Parsley to taste
- Coriander to taste
- Put the quinoa and water in the pot, adjust the salt and cook until dry, like rice. Let cool. Mix all ingredients in a bowl. Leave the salad very sour and if you like it, spicy too. Cilantro on top is optional!
