- Potato cut in half400 g
- Pea1/2 cup
- Arugula to taste
- Watercress to taste
- Pine Nut1/4 cup
- Cashew Nuts2 tablespoon
- Lemon juice1/2 cup
- Garlic Clove1 unit(s)
- Salt to taste
- Extra Virgin Olive Oil to taste
- Add the potatoes to a large pot of salted water and cook for 25 minutes until tender. In the meantime, make the pesto. Add all ingredients into a food processor and blend until smooth and creamy. Add the peas to the pot with the potatoes and cook for 1 minute. Drain and transfer to a bowl. Pour over the pesto and mix everything together. Serve with watercress ⠀
