- Large eggplant cut into medium cubes1 unit(s)
- Large zucchini cut into medium cubes1 unit(s)
- Chopped Cauliflower2 cup
- Chopped green beans1 cup
- Chopped red and yellow bell pepper1/2 cup
- Chopped Onion1/2 cup
- Chopped fresh rosemary to taste
- Sea Salt to taste
- Olive oil1/4 cup
- Coarsely chopped walnuts to taste
- Place all ingredients in a baking dish and mix well.
- Place in a preheated oven at 220ÂșC to bake for about 25 minutes, stirring a few times to avoid burning.
- After cooling, transfer to a container with a lid, drizzle with olive oil and refrigerate for at least 2 hours before serving.
- Serve with toast and bread.
