- Olive oil, salt and smoked paprika to taste
- Wash, sanitize and cut the eggplants into cubes.
- Soak in water and salt for 20 minutes.
- Place the eggplant cubes in a sieve. Rinse under running water and let the excess drain.
- Season the cubes with the oil, salt and paprika.
- Heat the Airfryer 180° for 5 minutes. Place the seasoned cubes and adjust the time to 20 minutes.
- Mix in half the time.
- Transfer to a bowl, sprinkle with chopped green onions and serve!
