- Coriander1 tablespoon
- Garlic1 to taste
- Salt1 to taste
- Seasonings1 to taste
- Cut the eggplant into cubes or strips and drizzle with olive oil and place in the oven. In a frying pan, brown the garlic and add the onion and let it decrease, after that add all the peppers, let it sauté and put the tomato and cilantro, when you finish sautéing, remove the eggplant from the oven and mix everything very well, add more oil, salt and seasonings to taste and bake for another 15 minutes. Remove and place in a glass jar or platter. Serve with toast or crema crackers.
