  • Clove of garlic (for mayonnaise)1/2 unit(s)
  • Mustard (for the mayonnaise)1/2 tablespoon
  • Oil (preferably sunflower) - (for mayonnaise)200 ml
  • Shredded chicken breast600 g
  • grated carrot1.1/2 unit(s)
  • Frozen peas1 cup
  • Steamed corn (can)1 unit(s)
  • Green Smell1/2 cup
  • Black raisins1 cup
  • Potato straw (extrafine)200 g
  • Homemade mayonnaise2/3 cup
  1. Place the egg, garlic, mustard and a pinch of salt in the glass of a mixer or blender. Beat until mixed and add the oil very slowly, until it thickens and becomes a mayonnaise point.
  2. In a bowl, mix the shredded chicken, the grated carrot (fine), the pea (blanch the frozen pea in hot water one minute before using), the corn, raisins, parsley and the mayonnaise. Take the opportunity to adjust the salt if necessary.
  3. Just in time to serve, put the potato straw. This way it gets crunchier when it's time to eat, and you can prepare the sausage in advance.

Despite the name of the traditional salpicão recipe being linked to Mexico and France, this typical Brazilian dish originated right here in our country. Many Brazilian cuisine recipes came from other places and were adapted and inserted here in our land, we are the authors of this one.


Even with many reports giving the authorship of salpicão to Brazilians, some stories talk about some dishes from Spain being responsible for the inspiration of salpicão. This variety of origin stories is quite common to many recipes, especially those created centuries ago.


This dish has become part of the Christmas dinner, which makes many mention it as the Christmas sausage recipe, even though it is prepared throughout the year. This fact also occurs because at this time of year it is customary to pay more attention to the preparation of salpicão and to insert some ingredients that are not always placed on a daily basis, as versatility is one of its characteristics.


The original recipe is usually based on mayonnaise, potato sticks, chicken, grated carrots, raisins and fruits such as apples and pineapples, but it can be made in many other ways, some more elaborate, others simpler, I also add green corn, ham and pea. A curiosity is that many see salpicão as a type of salad and prepare it without mayonnaise and, even with it being part of the dish, they call it that and not chicken salpicão, a more common name.
