- Cut the tomatoes and buffalo balls in half and set aside. Let the buffalo balls drain.
- Assemble the skewers alternating the basil leaves, buffalo mozzarella and tomatoes according to the recipe reference photo. Always start with the basil leaf and always alternate more leaves between the tomatoes and the mozzarella. Store them in the fridge.
- For the basil pesto: Peel 1 bunch of basil.
- In a mini food processor or blender process the olive oil, garlic, salt and nuts.
- Then add the basil leaves and process until a homogeneous paste forms. Adjust the salt and amount of oil if necessary. Do not process more than necessary, as this speeds up the oxidation process of the basil.
- Place the skewers on a plate and place the pesto in a small bowl in the center of the plate.
