Chop the anchovies and garlic, after finely chopped, fry with a drizzle of olive oil until the garlic begins to brown. Place the anchovies with garlic in a refractory and mix the mayonnaise, parmesan, lemon juice and pepper. Taste to see if the salt is good and set aside.
Cut the bread into cubes and brown with the oil, pepper and salt until crispy, about 5 minutes and set aside.
Chop the lettuce in a bowl and put the Caesar Sauce, mix well. Put the croutons, without mixing, and finish with grated parmesan.
Serve immediately so the lettuce and croutons remain crispy.
