Butter Bean Salad with Gorgonzola

- Cooked Butter Beans1 cup
- Diced Gorgonzola Cheese1/2 cup
- Chopped red onion1/2 unit(s)
- Cherry tomatoes cut in half1/2 cup
- Extra virgin olive oil to taste
- Arugula Leaves to taste
- Salt to taste
- Squeezed lime1/2 unit(s)
- Cook the butter beans until al dente (this beans does not form a broth and cooks in 25 minutes in a pressure cooker or 50 minutes in a regular pot) set aside
- Chop the red onion, cut the cherry tomato in half and the Gorgonzola cheese into cubes
- In a bowl put the cooked butter beans, the chopped onion, the tomato and the Gorgonzola cheese and mix well
- Season with olive oil, salt and lemon
- Serve with arugula drizzled with olive oil
