Simple Chicken Parmigiana

- Chicken fillet500 g
- Minced garlic cloves2 unit(s)
- Chopped Onion1/2 unit(s)
- Ripe tomatoes without skin and seed4 unit(s)
- Chopped Red Bell Pepper1 unit(s)
- Egg1 unit(s)
- Breadcrumbs to taste
- Salt to taste
- Black pepper to taste
- Mozzarella cheese150 g
- Season the chicken fillet with garlic, salt and pepper and leave for at least 20 minutes to get seasoning.
- In a pan, add a drizzle of olive oil and fry the garlic when golden add the onion
- Then add the red pepper and tomatoes (cut into small pieces)
- Check if the tomatoes are sauteed and add a little water and let it reduce. Taste, if it has acidity add a pinch of sugar and a pinch of salt.
- To bread it, break an egg into a container, add a pinch of salt and beat it as if you were going to make an omelette.
- Add the seasoned chicken fillet and turn front and back. Then roll them in breadcrumbs.
- After breading, fry them in very hot oil (without dipping them)
- After frying, add the fillets in a mold and place the tomato sauce and slices of mozzarella on top.
- Take to preheated oven for at least 25 minutes until the cheese is gratin. Time may vary according to the power of each oven
- Serving suggestions: white rice and mayonnaise salad
