  • Onion (for seasoning)1 unit(s)
  • Garlic Cloves5 unit(s)
  • Chicken broth3 unit(s)
  • Salt1 dessert spoon
  • Saffron1 to taste
  • Oregano1 to taste
  • Very shallow salt1 dessert spoon
  • Potatoes10 unit(s)
  • Onion (for the chicken)1 unit(s)
  • Small potatoes12 unit(s)
  1. In a blender, place the coarsely chopped onion, garlic, chicken stock, salt, saffron and oregano;
  2. Cover with water and beat for about 2 minutes;
  3. Poke some holes all over the chicken
  4. Place the whole chicken in a bowl or bowl;
  5. NOTE: Do not throw away all the leftover seasoning.
  6. Then put the beaten seasoning on that chicken and cover it with plastic film;
  7. TIP: if you need to, add a little more water, as the chicken has to be submerged to get the flavor of the seasoning.
  8. Put it in the fridge and let it rest overnight.
  9. Remove the chicken from the seasoning, transfer it to a pan or roast lined with aluminum foil;
  10. Place the peeled onion inside the chicken, close and tie the chicken legs with a string;
  11. TIP: if you prefer, fill the chicken with farofa
  12. Then accommodate the potatoes on the side of the chicken;
  13. Take a little of the seasoning (1 ladle) and drizzle over the chicken;
  14. Cover with aluminum foil, sealing the sides well;
  15. Bake in a preheated oven at 180°C for 1 hour.
  16. After this 1 hour, remove the aluminum foil.
  17. Return to the oven and leave for another 2 hours or until golden.
  18. Remove from oven and serve;
