- Chicken broth3 unit(s)
- Salt1 dessert spoon
- Saffron1 to taste
- Oregano1 to taste
- Very shallow salt1 dessert spoon
- Potatoes10 unit(s)
- Onion (for the chicken)1 unit(s)
- Small potatoes12 unit(s)
- In a blender, place the coarsely chopped onion, garlic, chicken stock, salt, saffron and oregano;
- Cover with water and beat for about 2 minutes;
- Poke some holes all over the chicken
- Place the whole chicken in a bowl or bowl;
- NOTE: Do not throw away all the leftover seasoning.
- Then put the beaten seasoning on that chicken and cover it with plastic film;
- TIP: if you need to, add a little more water, as the chicken has to be submerged to get the flavor of the seasoning.
- Put it in the fridge and let it rest overnight.
- Remove the chicken from the seasoning, transfer it to a pan or roast lined with aluminum foil;
- Place the peeled onion inside the chicken, close and tie the chicken legs with a string;
- TIP: if you prefer, fill the chicken with farofa
- Then accommodate the potatoes on the side of the chicken;
- Take a little of the seasoning (1 ladle) and drizzle over the chicken;
- Cover with aluminum foil, sealing the sides well;
- Bake in a preheated oven at 180°C for 1 hour.
- After this 1 hour, remove the aluminum foil.
- Return to the oven and leave for another 2 hours or until golden.
- Remove from oven and serve;
