Moelinha in cachaça

Limpe as moelas de frango com a ajuda de uma faca, ou com a mão mesmo. Retire o excesso de gordura e a membrana amarela. 


Clean the chicken gizzards with the help of a knife, or by hand. Remove excess fat and yellow membrane.


Em uma panela de pressão, aqueça o óleo e doure a cebola picada em cubos. Quando murchar, acrescente o alho e a pimenta de cheiro picadinha e refogue por 2 minutos. 
Com a panela em fogo alto, junte a moelinha e tempere com sal e doure por cerca de 5 minutos.
Coloque a cachaça numa concha, aproxime da chama e incline levemente para que a bebida pegue fogo. Com cuidado, regue a cachaça ainda em chamas sobre a moelinha. Deixe o fogo se extinguir antes de continuar. 
Adicione agora a cenoura picada em cubos pequenos ou ralada fina, a farinha de trigo, o alecrim, a folha de louro e o extrato de tomate, refogue por 2 minutos. 
Coloque 2 xícaras de chá de água fervendo e mexa.
Feche a panela e deixe cozinhar na panela de pressão, quando começar a chiar, abaixe o fogo e conte 40 minutos

In a pressure cooker, heat the oil and brown the diced onion. When wilted, add the garlic and minced pepper and sauté for 2 minutes.
With the pan over high heat, add the gizzards and season with salt and brown for about 5 minutes.
Place the cachaça in a ladle, bring it close to the flame and tilt it slightly so that the drink catches fire. Carefully drizzle the still-flaming cachaça over the gizzard. Let the fire extinguish before continuing.
Now add the carrot chopped into small cubes or finely grated, the wheat flour, the rosemary, the bay leaf and the tomato paste, saute for 2 minutes.
Add 2 cups of boiling water and stir.
Close the pan and let it cook in the pressure cooker, when it starts to sizzle, lower the heat and count 40 minutes.

Depois que sair a pressão, abra a panela finalize com o cheiro verde picado e sirva com torradas ou com seu acompanhamento de preferência ainda quente.

After the pressure comes out, open the pan, finish with the chopped green smell and serve with toast or with your accompaniment, preferably still hot.
