  1. Cut each piece of thigh and drumstick into two parts. Place in a large bowl and season with lemon, salt, pepper and other seasonings you like.
  2. In a very large and not too thin pan, add oil (about two fingers deep) and place the 3 finely chopped onions to fry. They should fry until very dark, almost burnt.
  3. Once the onion is well toasted, add the chicken pieces and let it fry a lot, stirring every 10 minutes. When the chicken starts to stick to the pan, you get some water and it drips around the chicken. This will make it come out of the pan, you will be able to turn the chicken and put other sides to fry as well.
  4. In the meantime, take a ladle of the chicken oil, put it in another pan and fry the bacon well fried.
  5. The chicken needs to be in this frying process and whenever it sticks to the pan, drip water around the chicken and stir for about 35 minutes. That way you will see that the chicken has taken on golden color and is cooked and fried.
  6. Now take the lid of that pan and drain most of the oil. After draining the oil, it's time to add the bacon, garlic, corn, carrots to the chicken and stir a lot to give that thermal shock and get the taste of the chicken.
  7. After stirring a lot, put 3 to 4 cups of rice (can be without washing the rice) and stir a lot, letting it fry. If you see that the oil in the pan is low, add a little of the oil that ran earlier.
  8. After stirring for about 8 minutes, you will put water in the pan until there are about two fingers above all the ingredients and cover to cook. As soon as the water dries up, add more water until it starts to come out on top of the ingredients. Cover again, leave the fire on medium and wait for the water to dry completely.
  9. After drying, put green smell on top and our Galinhada Mineira is ready
